Ingredients
- 1⅓ lb ground beef (600 g)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp ground nutmeg
- 1 tbsp potato starch or cornstarch
- ¾ cup milk (200 ml)
- 2 tbsp butter for frying
- Gravy: 2 tbsp butter
- Gravy: 3 tbsp all-purpose flour
- Gravy: 2 cups beef stock (500 ml)
- Gravy: ½ cup heavy cream (100 ml)
- Gravy: 1½ oz brunost (gjetost), grated (40 g)
- Gravy: 1 tsp red currant jelly or lingonberry jam
- Mashed potatoes and peas to serve
Instructions
Mix the beef, salt, pepper, nutmeg and starch. Work in the milk a little at a time until the mixture is smooth.
Shape 12 flat patties with a wet spoon and damp hands.
Brown the patties on both sides in butter in a hot skillet. Set them aside.
Melt the butter for the gravy in a pot. Stir in the flour and cook, stirring, until nutty brown, 3–4 minutes.
Whisk in the stock a little at a time and let the gravy simmer for 5 minutes.
Stir in the cream, brown cheese and jelly until the cheese melts. Season with salt and pepper.
Add the patties and simmer, covered, for 10–15 minutes, until cooked through.
Serve with mashed potatoes and peas.
Tip: Look for brunost as "gjetost" or "Ski Queen" in US stores, usually near the specialty cheeses.
